Cassoulet is a hearty and flavorful stew that originated in the southwest of France. It is made with white Mogette beans, pork belly, homemade smoked sausage, and duck confit, and is slow-cooked in a “cassole”, a traditional earthenware pot. The result is a rich and satisfying dish that is perfect for a cold winter day!
Looking for an historical anecdote? It is believed to have originated in the town of Castelnaudary in the 13th century, when it was made with beans, pork, and mutton. The dish became popular throughout the region, and each town had its own variation. In the 17th century, duck confit was added to the dish, and cassoulet became the dish we know today!
