"Abondance" is a raw cow's milk cheese made from Abondance, Tarine, and Montbéliarde cattle breeds. It has a semi-cooked paste and is shaped into a concave-heeled wheel weighing 6 to 12 kg. The cheese has a soft, melting texture and its color goes from ivory to pale yellow, with a fat content of 33%.
The aging process lasts for at least 3 months in a cool and humid cellar. During this time, the cheese is regularly rubbed with salted water and turned. Abondance cheese is exclusively produced in Haute-Savoie, a region in East France.
It is enjoyed as is, melted, or used in various savory dishes for its nutty notes and fruity flavor.
Fun fact : Each farmer only produces a few cheeses daily, which makes Abondance quite rare.
